The first scents we can remember. The first flavour we tasted. The first colours that we have seen and that we could never forget. This is what the Pòrva is for us, the naturally dried sweet pepper spice. We produce it by following our “sacred ritual” based on coarse-grinding dried and roasted peppers.

 

Taste guide

As a seasoning spice on a traditional potato and onion salad.
As taste enhancer in vegetables such as turnips and chicory sautéed in a pan.
As seasoning in pork sausages.
As ingredient of guacamole sauce.
In the sweet dough of chocolate creams for meringues.
As a taste enhancer paired with creamed cod or grilled lamb meat.

Secrets, are the fruits that are selected: autochthonous, precious, unique. Diano is the Vallo di Diano: the place where these fruits come from. Handmade: because everything that can be done by hand is done by hand. The peppers used are the only ones to have a proper name: Sciucillone - Sweet pepper, with very thin flesh, highly digestible if eaten fresh. Extremely suitable for drying, its name comes from the sciuscelle (carobs. In dialect). The Serpentino - Spicy pepper. Suitable for fresh, dry or processed consumption. Its name comes from its resemblance to a small snake. Sciuscillone and Serpentino, dried in the air for at least 50 days, chopped and cleaned by hand. Starìci, Porva, Cuòrno, Crema di Cuòrno, Serpentìno, La Piccànte, Fòrte names derived from the dialect. Outstanding examples of exceptional products. All products of “I Segreti di Diano” are entered into the register of the Denominazione Comunale di Origine (De.C.O.) of the Campania region. The Denominazione Comunale di Origine (De.C.O.) is a certificate that can be awarded by a municipality to recognise, promote and protect local food and traditionally made products that are particularly characteristic of its territory.
